Slow-Cooked Beef Roast

Dear Crock-Pot,

Oh wow. I had no idea. I heard through the grapevine that you were good, but seriously? I would have come to you a long time ago if I had only known. I cringe to think how much time has been wasted between us. This weekend, our first time together, I was blown away. I just didn’t know you’d be so easy to set up…or so satisfying. You took your time and kept things nice and low, and when I was ready, so were you. My mouth waters when I think of your beef roast, or dare I say “our” beef roast? I’m free this weekend if you want to try some pulled pork…



Serves 4 or 2 with leftovers


-1 large onion

-small red potatoes

-5 peeled carrots

-1 small natural apple sauce container

-1 beef roast (small to medium)

Salt, pepper, garlic and olive oil


First, rinse and chop your onion and carrots in large chunks. The potatoes can be left the way they are. Toss these in the bottom of the Crock-Pot with ½ cup of water and the apple sauce. On the stove, brown your beef roast in olive oil, 1 clove of sliced garlic, and salt and pepper. 15 minutes max. It should just be enough that all the sides are brown. Add in to the crockpot. Sprinkle thyme on top. Turn crockpot on low. Put the lid on but do not lock it shut. Cook 8-10 hours

Notes: This was my first time using a Crock-Pot and I definitely was nervous because I had read the meat could get dry if there isn’t enough liquid in the pot. I definitely had enough liquid. Also, I stupidly forgot to cut the fat off the roast. Not a huge deal but I would cut it in the future for health reasons (I mean, it tasted delicious..). I prevented any sticky clean up by spraying the Crock-Pot lightly with some Pam before putting everything in.  Leftovers tonight were equally awesome. I will definitely be trying more recipes soon!

    In the cold darkness of winter there is nothing like setting up the crockpot in the morning, putting it on low for a 10 hour cooking session, and walking in after work to the smell of dinner cooked. The picture of this meal makes my mouth water and it’s only 6 am . Another on my to do list Sum.
