The first time I ever had sauerkraut was in the land of the Pennsylvania Dutch. My aunt Elkie is German and made us some sauerkraut at dinner. I thought it was pretty awesome and I remember eating a whole plate of it on their porch overlooking a field of wild flowers. I think this experience has made me associate sauerkraut with warm weather and family memories. I don’t have it a lot, but with all this beautiful spring weather I thought it would be a perfect, easy dinner.

Cook or grill your sausage, sauerkraut, and pepper with olive oil. Toast your roll. Enjoy!
