When I was a kid I used to swim in a catfish infested pond. Those giant beasts would come up out of the murk below and suck the air near me, looking for food. It was terrifying. I always expected to feel the sting of their whiskers, but never did. I like catfish a lot better on my plate.
This is a really simple dish to make, and of course fish is really good for you (omega 3, science, yada yada). I bought 2 fillets of catfish at my local fish market. I actually had all of the spices I needed to make my own rub. I would give you measurements, but that’s not how I roll.

In the picture there is some chili powder but I decided last minute not to use it – and good thing too. It had plenty of heat with just the cayenne. Sprinkle all of these spices on both sides of your catfish. Heat up a large frying pan with a little oil (so the bottom is coated). Cook on each side for about 4 minutes (medium heat) and you are done! I served with a side of Sicilian cauliflower and some leftover cherry tomatoes.
