Before a horrendous food poisoning incident prior to a Bruce Springsteen concert, I used to occasionally frequent The Outback Steakhouse. They had this dish called Cyclone Pasta that was out of this world. It was probably my daily allotment of calories, but man, was that stuff good. In fact, the night I was horribly poisoned (French onion soup, go figure) I had asked what was going on since I noticed the Cyclone Pasta wasn’t on the menu. Imagine my chagrin when I learned it had been removed from the menu, permanently. Sacrilege. I never forgot it though. Lately, Hubby and I have been eating really healthy kudos to Tony Horton, but I got the thumbs up to make a comfy pasta dish, which most of you know is my forte. I had to go all out. Make this some night when you are really hungry and want leftovers. I did my best to make it as healthy as possibly.
salami (chopped into 1/2 in pieces)
1 green pepper
1/4 red onion
1 stalk of celery
1 garlic clove
alfredo sauce (Paul Newman’s is healthier than Classico)
whole wheat pasta – (Healthy Harvest Fusilli)
stewed tomatos (can)
1 tbsp olive oil
spices (salt, pepper, paprika, cayenne)
First you are going to cover your chicken breasts in the 4 spices listed above. Cook them in a large frying pan until cooked through. Set aside and let cool.
Get a large pot of water boiling for your pasta. Chops your veggies in the mean time. In the same large frying pan (Shout out to apartment people who don’t have dishwashers!) toss in your garlic, olive oil and onions. Keep it pretty low so you don’t burn your garlic. That would be a travesty of unimaginable proportions. After a few minutes toss in your chopped peppers, celery, stewed tomatos, and a few sundried tomatos. Get your pasta cooking once the water is boiling. Next toss in your chopped salami and add your alfredo sauce.
Slice up your cooked chicken and add this into your sauce. Keep mixing to get all your flavors together. The alredo sauce should no longer be white, but more of an orange-y color.
Once your pasta is cooked, plate it with your sauce mixture. mmmm. Try not to eat it all – save some for tomorrow.
