Not-so-Blasé Salad

Of course, I’m not a completely changed woman. I ate the salad with some chicken.

Below is an easy throw together meal that packs a flavorful and refreshing punch. If you ask me, the cheese and the pecans make it.

Ingredients for the salad

  • washed spinach and baby arugula
  • cherry tomatoes
  • crumbled blue cheese
  • EVOO
  • Pecans
  • chopped red onion

Eyeball and add together in a large bowl, with some of the EVOO on top (I still haven’t found a salad dressing I can stomach other than EVOO) We served this with some chicken cooked on the stove top. What do you think? Does anyone else have some good salad recipes? Future in-laws – what is Nancy’s recipe with the cranberries and ramen noodles?

    My little baby is growing up, she now eats salads. This looks fantastic and packs quite a punch of nutrition. I love salad but when eating it for a main meal need protein with it like you. Chicken, sliced steak, cheeses are perfect. Craisens and raisens add loads of flavor. Have you tried adding a few drops of Balsamic Vinegar to it with the EVOO? Delicious! Way better than bottled dressings health wise. A drop or two of Balsamic Glaze wonderful also. Love the combination of arugula and spinach. Healthy!!
