Shrimp Scampi

I have had this dish twice in the past two years. Both times it was prepared by my Italian grandmother. I’m sure you can imagine how good it is, especially down in Florida after a day at the beach. Well, I just got back from vacation (hence the lull in posts) and being met with 30 degree weather was a huge summer bummer. So, what better way to get ready for spring than by making this delicious and healthy recipe? After all, I’m starting to approach bridal slim down crunch time. As a matter of fact, Nikki has been pretty quiet on the blog, I assume because she is still enjoying her NEWLY ENGAGED GLOW. CONGRATULATIONS NIKKI!

So all the other brides-to-be and anyone else looking for a deliciously filling but fairly guiltless meal should check this out. It’s also a pretty quick meal and a great dish to serve to impressed guests.

For 2-3 people
-10 to 15  shrimp (more or less as wanted. I bought Tiger Shrimp deveined and shelled)
-6( more or less) sliced black olives. I used a small can of sliced olives
-1/2 jar sliced pimento (pickle/pepper shelf at store)
-4 garlic cloves chopped fine or pressed
-one can artichoke hearts (not marinated)  (you can break them up a bit before adding or buy it quartered as I did)
-2 Tablespoons chopped fresh parsley( or a teaspoon if dried)
-olive oil
-pinch black pepper
-sliced mushrooms – I also bought them in a can

-cooked linguine

First, get your water boiling for the linguine. Linguine takes about 9 minutes to cook so I would suggest you start doing everything below once the linguine has been cooking for about 3 minutes.

     Heat oil in pan on medium high heat.  Add garlic. Stir fry shrimp until pink (if precooked just stir a minute until warm).  Shrimp takes about 2 minutes on each side. If you cook it more than 5 minutes it can get rubbery. When shrimp starts to make the shape of an O it is Overcooked. When it is still open to a C it is Cooked!

Now add all other ingredients except pasta. Stir until all combined and nice and hot. Pour over drained pasta, top with grated Parmesan.  Scallops or clams can be used in this dish also, or a combination of all three.  You can add capers as well. All good advice from my mom who sent me this recipe.

I hope you enjoy this! This was my first time cooking shrimp, olives, pimentos and mushrooms. A great first experience.
